Banana pancakes are the tastiest solution for when you have overripe bananas at home. The riper the bananas, the better the pancakes. But it only gets really good with my favourite not-so-secret ingredient. This recipe is a celebration every time, and yes, even during the week.

 500 ml soy milk
 200 g whole wheat flour
 50 g buckwheat flour
 4 tsp baking powder
 2 bananas (the riper, the better)
 1 pinch salt
 1 dash oil
 1 pack vanilla sugar (optional)

Blend all the ingredients.

Bake in a lightly greased pan over medium heat.
