Granola is really easy to make. As long as you stick to the right ratio, you can experiment with different ingredients that you have at home. Try it out for yourself with some different nuts, seeds and spices. Instead of sugars and oil, we make this granola with applesauce. This gives it an extra fruity taste, so you get a delicious end result with relatively less sugars and fats. The granola gets nice and crunchy. Ideal for a breakfast bowl with, for example, fresh fruit and soy yogurt, or as a topping for overnight oats and smoothie bowls.

Granola

This granola only tastes slightly sweet because of the applesauce. It's fruity and spicy. Do you like it a little sweeter? Feel free to add some maple syrup or a few drops of liquid stevia. Stevia naturally has a strong sweetening power with a herbal taste that works best in recipes with lots of spices like this one. Golden syrup is a budget-friendly alternative. That is an invert sugar syrup, which means that it consists of equal parts glucose (dextrose or grape sugar) and fructose (fruit sugar), a delicious combination for granola. Don't be fooled: sugar is still sugar, so it should always be used in moderation, but golden syrup is more affordable, more sustainable and cheaper than honey, for example. That's because it can easily be made from sugar beets or sugar cane. I usually make my granola without extra sweeteners. I mostly use it as a topping for other sweet stuff, like fruit and smoothie bowls. That's why for me personally it doesn't have to be sweet as well, but it does have to be crunchy and tasteful. The spices also spread a wonderful aroma inside your home while baking. Enjoy it!

Ingredients

Basic recipe
 200 g old-fashioned rolled oats
 200 g nuts and seeds: walnuts, hazelnuts, sunflower seeds, pumpkin seeds, flax seeds, quinoa ...
 100 g applesauce
 spices of your choice: cinnamon, ginger, cardamom, nutmeg, salt, speculaas spice mix ...
Extra sweeteners of your choice (optional) - add more or less to your taste
 5 drops of liquid stevia
 2 tbsp maple syrup
 2 tbsp golden syrup
Extra additions after baking (optional)
 dried fruits (optional): raisins, cranberries, dates, prunes, freeze-dried berries...
 puffed grains: quinoa, rice, wheat, oats, spelt, buckwheat ...

Directions

Roughly chop the nuts and mix together all the ingredients in a bowl except for the dried fruits and the puffed grains: those should be added after baking (optional).

Spread the mixture onto a baking tray with a silicone baking mat (reusable baking sheets).

Bake in the oven at 180°C/350°F for 30 minutes, stirring halfway through. The granola is ready when it's golden brown. If necessary, bake it a little longer.

Let it cool on the baking mat. The granola will only turn crispy once it has cooled down completely. That's when you can optionally add dried fruits and/or puffed grains. Store in an airtight container.
